OWNER PROFILE (MR. NICOLO ESPADERO)
Growing up in the family business, Mr. Nicolo Espadero’s childhood is interwoven with the baking of breads, cakes, and pastries. As a kid, he would work as a production baker at their family bakery, Valley Bread, during his summer breaks. This is where his experience in baking began. However, his love and passion for food started later when he moved to Canada to study Artisan Baking Pastry and Culinary. After studying, he stayed in Canada and landed a job at an Artisan Bakery as a bread packer. He would work his way to earning the trust of the owner of the bakery and form a bond of being his mentor. He was designated as the mix man of the bakery where he was responsible for mixing all the breads and pastries. Mr. Nicolo wanted to further enrich his skills and knowledge so he quit his job and went to Pacific Institute of Culinary Arts where he earned top student. He dedicated his time learning new techniques and technologies in baking he would later bring back home.
Having lived and worked in Canada for quite some time, Mr. Nicolo always had a longing to go back to his hometown in La Trinidad, Benguet. He always wanted to contribute to his family’s business while creating products that stand out with their own identity. He has always envisioned himself working with local farmers to encourage people to eat more fresh and natural food by using locally-sourced produce and ingredients. With his vision of offering a unique experience and healthier options, James Wright Café was conceptualized.
In October 2020, Mr. Eric Dion Espadero together with his son Mr. Nicolo Espadero conceptualized a brand of Valley Bread that offers Artisan products. They thought of an environment where people can experience breads and pastries made with the most naturally sourced ingredients made by skilled bakers and cooks. This paved the way for the creation of James Wright Café, which was named after the former street where Valley Bread was established, with the mission to educate people about artisan baking and to introduce sourdough bread.
